Introduction about Tongkat Ali

Hiliran Cafe - recipe Chicken Chop

Ingredients
2 pieces boneless drumstick with skin, cleaned and dried well with absorbent paper kitchen towels
2 eggs
50g flour
1/2 tsp soy sauce
A dash of pepper
A pinch of sugar
1 potato, cut into wedges
1 tomato, quartered
1 big onion, cut into halves and sliced thinly
50g button mushrooms
50g mixed vegetables
1 cup boiling stock
(A):
1 tsp soy sauce
Salt and pepper
A dash of Worchestershire sauce
Seasoning:
2 tsp soy sauce
1/4 tsp pepper
1/4 tsp sugar
2 cm cinnamon stick (kayu manis)
1 clove
1/2 star anise (bunga lawang)
MethodMarinate chicken with (A) for two to three hours in the refrigerator or preferably overnight.
Dust chicken with tapioca flour and deep fry in medium hot oil till chicken turns a light golden brown. Dish out and drain on absorbent paper kitchen towels. Fry potato wedges till golden.
Brown 1 tbsp flour in 2 tbsp butter. Add boiling stock and seasoning. Put in button mushrooms, big onion and tomato. Simmer for five to 10 minutes till gravy is thick.
Pour gravy over chicken and add accompaniments.
Hiliran Cafe - recipe Nasi Dagang

Malay food, cooking method - steam
Ingredients
300g nasi dagang rice or substitute with 200g
good grade Siamese rice mixed with 100g glutinous rice
1 grated coconut to extract 3/4 cup thick coconut milk and 3/4 cup thin coconut milk
1/4 tsp fenugreek seeds ( halba )
2 cloves garlic, sliced finely
3 shallots, sliced finely
2cm young ginger, sliced finely
1/2 tsp salt
Method
Wash rice well and soak for five to six hours. Drain well, then steam rice for 20 to 25 minutes or until half-cooked.
Stir in thin coconut milk and continue steaming for 15 minutes until rice is nearly cooked.
Combine thick coconut milk, shallots, garlic, ginger, fenugreek and salt. Stir into the cooked rice then steam once more for 10 to 15 minutes or until rice is properly cooked.
Serve rice with kari ikan tongkol.
Note
Nasi dagang is a special type of reddish brown glutinous rice. If it is not available, substitute with Siamese rice and glutinous rice mixture as per recipe.

The keropok lekor is so well known that people as far as Kuala Lumpur, Penang and Johor will stop by the stalls selling these delicacy whenever they are in the area. Those who have tasted the Losong crackers will agree that they are the best there is because fish makes up 90 per cent of the ingredients. This is essential in bringing out the flavour. The types of fish mainly used are the ikan parang (herring), tamban (sardine-like fish) and selayang (decapterus russellii).
